No sear=no maillard=waaaaay less flavor. Also braising things usually aren’t fully submerged, so they can actually keep developing maillard in the oven. Wine, stock, and beer all also have and impart actual flavor, unlike plain water. Of course you can boil with those things, but then you need a lot more of them, which is more expensive/wasteful. Drastically different results using different ingredients and equipment means not really samey at all imo.

2·18 days agoThe ice bath will give you consistency so it’s not such a dice roll. It also helps stop the egg cooking, in case your going for a jammy or soft-boiled egg. And you can peel sooner because it’s not so hot.

No I’m not, I’m interpreting it as the object of the preposition by. The lack of hyphenation means that child is either a noun which is eating pedophiles or an adjective describing pedophiles who are eating. Presumably neither is what the author intended.
