If checking your mail, browsing and streaming is all you care about without the Windows nonsense, with some scattershot choice of gaming, then Linux is for you.
Everything else in your post is preference, which is fine. I do not understand the love for Notepad++ but that is your choice.
But when you said Linux is basically checking mail and the rare game, well that is nonsense.
I use Linux because I need reliability and no bullshit so I can do my work. I remote into all sorts of environments and deal with Windows often, I would never want any of that on my home or work computer. Windows is too slow and too broken for me to rely on for earning money.
But I also do all my hobbies: music production, photography, graphic design, 3d modeling, 3d printing, creating web pages, etc. There is really nothing I need windows for.
As for games: My library shows 1200 games ready to play, so I am not sure why you say “scattershot”. I am playing the latest Resident Evil Requiem right now. Works perfectly, no set up steps at all.
So fine, maybe linux isn’t for you, but no reason to spread fud.

I can’t help you with full encryption after the fact, but if you do decide to do it, make a snapshot first. Clonezilla makes it easy, and you can encrypt it.
If anything goes wrong when you do the encryption, you can always roll back to your snapshot.
You may already know all that, but I thought I would mention it.
I use the same tool to make snapshot when I change OS and drives, and use the snapshot to make a VM. If I forgot anything in the new OS, it’s all their in the VM of my old OS.

Edit: I did grab a subscription to Nebula for a year for €25 because I like someone on there. Seemed reasonable for a whole year of everything they have, and I do like watching Legal Eagle these days.

Slowly though. Watching is wasting a lot of time, and nearly everyone on there stretches it out in the name of “content” and sponsers.
There are a few that don’t, but realistically, that knowledge is elsewhere. It’s a shame people don’t self host videos as much any more. I just embed them in my web page if I absolutely need to.
Or simply make the files available, which if you look around, a lot of them are out there, so download and watch at your pace, and delete when done.
